Description
This coffee was processed at the Rugali washing station in the Nyamasheke District of Rwanda. In its 10 years of operation, the Rugali washing station has become well known for producing outstanding coffee for the international speciality market and which has been used in roasting and cupping competitions, placing it firmly on the coffee map.
The washed coffees are hand-sorted before being floated before being pulped. Under-ripe, damaged, or poor quality coffee cherries are removed before it is pulped, ensuring only the best coffee makes it through to the finished product. After pulping, the coffee is fermented for around 12 hours, during which it is agitated by ceremonial foot-stomping. It is then graded and washed before being hand-sorted again to remove damaged beans, then dried for 30 days.
