This coffee is a carefully combined blend of beans from Honduras and Ethiopia decaffeinated using the gentle CO2 method which removes 99% of the caffeine while preserving the flavour and aroma profile.
Honduras
APROCACERCHIL (Asociación de Productores de Café Certificados Chiliquera) began in 2010 with a small group of nine farmers determined to improve their lives and the land they worked. They achieved organic certification that same year and set out to prove that sustainability and prosperity could coexist. In 2013 they formally established themselves as a company with one hundred and twenty-four partners. Today, the cooperative brings together more than three hundred producers across the western Honduran municipalities of Corquín and Belén, in the department of Copán. Around a fifth of the farm owners are women.
Their farms sit on steep, fertile slopes between 1,200 and 1,700 meters above sea level, where volcanic soils and cool mountain air shape the character of the beans. The coffees are known for balance and sweetness, often showing notes of milk chocolate, red apple, caramel, and nuts. Shade-grown trees, composting, and water conservation are part of everyday practice, preserving soil health and biodiversity for future generations.
APROCACERCHIL holds Rainforest Alliance, UTZ, Organic, and Fair Trade certifications. These commitments go beyond labels; they shape how the cooperative farms, trades, and reinvests. Its members follow strict ecological standards, ensure fair wages, and channel profits into social projects such as schools, health centres, water systems, and environmental restoration.
Over the years, the group has expanded its technical and processing capacity, building infrastructure for wet milling, drying, and storage. This allows them to handle more of the value chain themselves and maintain the quality that defines their coffee. The cooperative’s work is rooted in sustainability and self-reliance, aiming to create stable livelihoods that do not depend solely on the volatility of global coffee prices.
Ethiopia
Fahem is a member of Jimma Farmers Multi-purpose Agricultural Cooperative Union (JFMACU), a well-established cooperative based in Ethiopia’s Jimma Zone, within the Oromia Regional State. It was founded in 2004 with 14 primary cooperatives and 7,818 members and has grown substantially, now comprising of 212 cooperatives, 28 of which are coffee growing collectives, and 141,146 farmer members.
JFMACU is renowned for its high-quality washed and natural coffees grown at elevations between 1,800 and 2,300 meters above sea level. The region’s favourable tropical climate and abundant rainfall contribute to the distinctive character of its coffees. JFMACU holds certifications including Organic, Rainforest Alliance, Fairtrade, and Café Practices demonstrating its commitment to sustainable and ethical production. Beyond coffee production, JFMACU actively supports community development projects including constructing schools and health centres and providing access to clean water. These efforts aim to enhance the living standards of farmers and their communities.
