Description
This coffee was grown in the Sierra Madre de Chiapas, part of the El Triunfo Biosphere Reserve where small-scale agroforestry supports both livelihoods and biodiversity.
It was decaffeinated using the Mountain water process in which the coffee is steamed and then soaked in pure mountain water from Pico de Orizaba, the highest mountain in Mexico. After the coffee beans have been soaked in the water, it is passed through activated charcoal filters to remove the caffeine and then the water can be reused for subsequent batches.
